Kevin Bludso discussed his major contributions to West Coast barbecue culture. Bludso shared stories about his passion for innovating in a space that wasn't traditionally respected in the West Coast food scene. His dedication and the achievement of bringing a distinctive quality to his food earned him the nickname the Godfather of West Coast BBQ. As well as being renowned for his barbecue recipes, Bludso won praise for bringing an 'experience' to his BBQ restaurants with equally notable side dishes. He was particularly proud of his innovations in side dishes that were traditionally served, such as baked beans in barbecue sauce with brisket chunks. Bludso makes a consistent effort to introduce mature and well-tested recipes from his food journeys and personal experiences.
