🥩 Braised BBQ Short Ribs
Ingredients:
2 lbs boneless beef short ribs
2 tablespoons kosher salt
1 onion, chopped
2 carrots, chopped
2 celery stalks, chopped
1 head of garlic, halved
Chiles California & Ancho chiles (or 1 can chipotles in adobo)
2 tablespoons tomato paste
4 cups beef broth
AP Seasoning to taste
1 tablespoon oregano
1 tablespoon chili powder
1 tablespoon cumin
1 packet Sazón
Your favorite BBQ sauce (we used Mr. Make It Happen BBQ Sauce)

🍅 Fresh Pico de Gallo
Ingredients:
1 cup diced tomatoes
¼ cup chopped cilantro
1–2 jalapeños, diced
½ red onion, finely diced
Zest & juice of 1 lime
Salt and pepper to taste
Method:Mix all ingredients in a bowl. Let sit for 15 minutes to allow the flavors to marry.

🥑 Loaded Guacamole
Ingredients:
3 ripe avocados
¼ cup diced red onion
¼ cup chopped cilantro
1–2 jalapeños, finely chopped
AP seasoning, a pinch of cumin, and chicken bouillon powder to taste
Method:Mash avocados and fold in remaining ingredients. Adjust seasoning to your liking.

🧀 Creamy Yellow Queso
Ingredients:
1 tbsp butter
1 tbsp flour
1 cup milk or half & half
1½ cups shredded cheddar
½ cup American cheese or Velveeta
½ tsp garlic powder
½ tsp onion powder
¼ tsp smoked paprika
Salt to taste
Optional: diced green chiles or jalapeños
Method:
1. In a saucepan, melt butter and whisk in flour.
2. Gradually add milk and bring to a gentle simmer.
3. Stir in cheese a bit at a time until fully melted and smooth.
4. Season and keep warm for serving.
