Hi everyone, and welcome back to the kitchen! Today, we're making a delicious and healthy vegan alternative to paneer: red lentil tofu! It's packed with protein and nutrients, and perfect for incorporating into your favorite stir-fries, curries, or salads.

*Ingredients*

Red lentils (lal masur dal)
Water
Lime juice or vinegar (optional)

*Instructions*

1. *Soak the lentils:* Rinse the red lentils thoroughly, then soak them in water overnight. The next day, discard the soaking water (you can use it to water your plants!). Soaking helps eliminate phytic acid and improves nutrient absorption.

2. *Make lentil milk:* Blend the soaked lentils with fresh water until smooth. Add more water as needed to extract the most milk and nutrients from the lentil fiber. Strain the mixture through a cheesecloth or fine-mesh strainer, squeezing out as much milk as possible.

3. *Separate the curds and whey:* Let the lentil milk sit for 30 minutes. The starch will settle at the bottom, while the protein floats on top. This is the base for our vegan paneer.

4. *Cook the milk:* Gently heat the lentil milk, taking care not to disturb the starchy layer at the bottom. You can save this starch to use as a thickener later in recipes like chapatis or bread.

5. *Curdle the milk:* The red lentil milk should curdle naturally, but if it doesn't, you can add a little lime juice or vinegar. The milk will separate into curds (our vegan paneer) and whey.

6. *Strain and refrigerate:* Line a colander with cheesecloth or a clean cotton cloth. Carefully pour the curds and whey mixture through the cloth, separating the curds. Tie the cloth tightly to squeeze out any remaining whey. Be cautious, as the mixture will be hot!

7. *Chill and enjoy:* Refrigerate the curds for a firmer texture, making them easier to cut and use in your dishes.

8. *Serving suggestions:* Enjoy your red lentil tofu in stir-fries, curries, salads, or even toasted with oil, salt, and paprika for a quick and satisfying snack.
