I was lucky enough to try some of Crazy Dave's 50,100 and 150 dry aged meat.
Before I do this I want to give you guys a little background and show a couple pictures of my setup for those that haven't seen it to show that it's not a Mickey Mouse setup. I've only aged Prime and Wagyu. Aged more than 2,000 dollars worth of meat in less than 4 months.
I put my first ever meat in on June 1st. Went 48 days.
Really didn't like it. Had some very strong notes to it. My brother and Mom didn't really like it either. We are all very big beef eaters. From that point on I cut my age times down to 30-35 days. Still had the slight taste that I found very objectionable on the 48 day. So I already had in my mind that I wasn't going to like this meat and even told a friend at work that I would cut the 150 day one in half and give it to him.
All steaks are cooked SousVide at 133* and seared after.
Cooked up the 50 day steak and ate it. Pretty good. Had zero amount of the taste I didn't like on my 48 day one.
So the next day I cooked up the 100 day steak. It was Mind Blowing. Deep beef flavoring and zero amount of that flavor I didn't like with mine. I'm thinking to myself, how could this be?? Dave and I run almost exactly the same temp and Humidity. How can a 48 day suck and a 100 day blow my mind. I couldn't wait to try the 150 day. It was a very thick steak so I cut the bone off and cut into two steaks and cooked one and was going to give the other to my coworker.
I took it out of the bag (raw) and smelled it. It smelled earthy and good. Cut it and cooked it.
It was Earth shattering!!!!!!!
99.9% better than anything I've ever eaten.
If the taste difference between the 100 and 150 is the same as a 150 to 200 I wouldn't hesitate to age and eat a 200 or more aged steak.
So I'm pondering why Dave's and my steaks were so different.
This is what I came up with;
NOW THIS IS ONLY MY OPINION;
Dave only aged Choice and mines Prime.
So I had my first ever choice that I had in for 35 days. I cooked it up and it also had zero hint of the flavor I didn't like.
So it leads me to say in my opinion Prime sucks and I'll never age Prime again.
