Kokum or birinda is a seasonal fruit, which can be used for juice, rasam and in some medicines. As it is seasonal, we need to preserve it for whole year so that we can use it whenever we need. In this video, I show you how to preserve it's essence & rind for the whole year. The essence is used for preparing juice. The rind can be used for juice, rasam and also tambuli etc.If there are sugar patients in your house, don't follow this method. Instead just dry the rinds/peels of it without adding sugar. Ofcourse this is a healthy option.It's shelf life is minimum of 6 months and maximum of 1 year. You can even store it in refrigerator to get best shelf life.
