High Protein Strawberry Ice Cream
Ingredients:
1 lb. organic strawberries, frozen
1 banana, frozen and broken into pieces
½ cup full fat cottage cheese
⅓ cup date paste, maple syrup can be used

Directions:
To make the quick and easy date paste, place 1 cup of Medjool dates that are pitted into a high speed blender along with 1 cup of water and blend until completely smooth and creamy.

In a food processor, place the frozen strawberries, banana, cottage cheese and date paste and process until smooth and creamy. Scrape down the sides of the food processor as needed. Taste for sweetness and add more date paste if desired.

You can eat this soft serve or you can place the soft ice cream in a freezer safe bowl and freeze until firm. To serve then let the ice cream sit out on the counter for 10 - 15 minutes to soften and then you will be able to scoop it out into a bowl. Enjoy!
