Hi! :) My name is Dominique and I have been vegan for six years and love creating vegan meals. I am simply a vegan turning plant-based dreams into a delicious reality one recipe at a time. My main goal is to eliminate the stigma surrounding veganism and introduce a vegan lifestyle to more people without judgement. 100% vegan - 100% affordable - 100% made with love.

Every week differs, but when I am not creating content this is what I make for myself. On this weeks menu we have salad, braised eggplant, and smothered green beans. Comment your favorite dish! :)

Vegan Caesar Dressing:
1/4 onion, diced
2 cloves minced garlic
1/4 cup tahini
1/4 cup nutritional yeast
1 tbsp soy sauce
1 tbsp capers brine
1 tbsp capers, smashed
1 tsp Italian seasoning
1 tsp black pepper
1/4 cup nutritional yeast
1 tbsp garlic powder
1 tsp Italian seasoning
1 tsp lemon juice
1 tsp dijon mustard
Water
Salt
Pepper

Braised Eggplant ingredients:
2 Chinese eggplants
3-5 cloves of garlic, minced
1 tbsp rice wine vinegar
1 tbsp tamari sauce
1 tbsp light soy sauce
2 tbsp vegan oyster sauce
2 tbsp agave or brown sugar
½ tsp sesame oil
½ tsp cornstarch dissolved in a little water
1 tbsp chili flakes
Water

1. Steam eggplant for 5 minutes.
2. Fry the eggplant in an well oiled pan on medium high heat until both sides are golden brown.
3. Add 1/2 of the sauce and allow the eggplant to simmer. Once the sauce thickens, flip the eggplant half way through.
4. Serve over rice and enjoy!

(Green seasoning) Haitian Epis:
🌱 Red pepper
🌱 Habanero
🌱 Garlic
🌱 Ginger
🌱 Scallions
🌱 Parsley
🌱 Apple cider vinegar
🌱 Olive oil
🌱 Vegan chicken bouillon cube
🌱 Salt

Smothered Green beans Ingredients:
Green beans
Potatoes
Vegan sausage
Liquid smoke
Onion powder
Garlic powder
Creole seasoning
Smoked paprika
Pepper
Flour
Vegan butter
Onions
Minced garlic
Vegetable broth or vegan chicken bouillon + water


Strawberry Horchata ingredients:
Tips:
🍓 Strain twice for it to be less grainy
🍓 Allow the rice to sit in water overnight
🍓 Make sure rice is soft all the way
🍓 Add vanilla

Ingredients:
1 1/2 cups rice
3 cups hot water
3 cinnamon sticks
Splash of vanilla
1 can coconut evaporated milk or two cups vegan milk
1 can sweetened condensed milk OR sugar
Strawberry purée
1 cups of water (use more or less depending on your taste)

In a large bowl, mix together the rice and cinnamon sticks, then pour in 3 cups of hot water. Set aside overnight. Make sure the water is hot to the touch but isn’t boiling.

Make the strawberry puree by blending strawberries and vegan milk in a blender until smooth.

After the rice has steeped overnight. Pour everything except for the strawberries into a blender and blend for 30 seconds. Strain through a fine-mesh strainer or cheese cloth into a pitcher. This is important to ensure the horchata isn't grainy.

Stir in coconut condensed milk, coconut evaporated milk, and the strawberry puree. Top the pitcher off with some water and enjoy.
