There’s nothing quite like a real homemade Italian tomato sauce — rich, smooth, and full of depth. Today, I’ll show you how to make it from scratch like a real chef, using just a few simple ingredients that turn into something insanely good.
We start with ripe Italian tomatoes, onion, celery, and carrot, all finely diced in brunoise.
They’re slowly caramelized in olive oil to build that deep flavor base — no shortcuts here!
Then we add the blanched and peeled tomatoes, a pinch of salt, and let it simmer low and slow until it thickens and turns silky and glossy.
For a pro touch, we add half a carrot while simmering — it naturally balances the acidity of the tomatoes.
Once it’s perfectly reduced, finish with a drizzle of good olive oil and a few fresh basil leaves.
This sauce is perfect for pasta, lasagna, or even as a base for other Italian dishes.

• 1 kg (2.2 lb) ripe Italian tomatoes
• 1 onion, finely diced
• 1 carrot + ½ carrot (for balancing acidity)
• 1 celery stalk, finely diced
• 2 tbsp olive oil

1. Score an X on the bottom of the tomatoes and blanch in boiling water for 1 minute.
2. Transfer to ice water for 40 seconds, then peel and dice.
3. In a skillet, heat olive oil and sauté onion, celery, and carrot (brunoise) until caramelized.
4. Add diced tomatoes, season with salt, and cook on medium heat.
5. Add ½ carrot to balance acidity, cover, and let it simmer, stirring occasionally.
6. Remove the carrot once the sauce thickens and gains body.
7. Finish with olive oil and fresh basil.
