The Egg Bhurji is a really famous dish in Northern and Western India. Also it just takes few minutes to make and goes really well with a lot of Breads. In Mumbai it is served with Pav and in many other states it is served with Parathas, but I served it with some fresh English Muffins and it goes really well with it. Many people confuse "Bhurji" with scrambled eggs, but actually they are pretty different. So this is my way of making an Egg Bhurji, which i can confidently say is TASTYY!!

INGREDIENTS :
2 Eggs
Bread of choice ( Pav, Parathas, Roti, English Muffins )
1 tbsp of Vegetable Oil
1/2 tbsp Ginger Garlic Paste
1 Medium Sized Onion
2-3 Tomatoes
7-8 Green Chillies
4-5 Garlic Cloves
1 tsp Red Chili Powder
1 tsp Garam Masala Powder
Coriander Leaves for Garnishing
1 tbsp Mayonnaise
2 tbsp Yogurt
Salt to taste
Black Pepper to taste
Sliced Onions for Garnishing
