Today we’re showing you how to make the ultimate Alice in Wonderland cake.
To begin, we’ve already baked our cakes and allowed them to cool. You will need a 6-inch and an 8-inch tier. For this cake, each tier consists of 3 layers.
Cover each tier with buttercream and place them in the fridge to set for at least 15 minutes.
While the cakes are chilling, form the diamonds for the top tier by rolling out blue fondant. Once it’s 1cm or 1/2 an inch thick, use a pizza cutter or knife to cut the shapes. A ruler can help when making straight lines.
The cakes are now chilled and we’re ready to cover them. Add a final layer of buttercream; which will act as glue for the fondant. Next, knead and roll out the fondant to about 1cm or 1/2inch and then transfer the fondant to the cake. Gently mold it around the cake. Smooth out any folds and air pockets. This can be tricky, Take care and don’t rush it.
Next we’ll begin to decorate the cake, here we are using clear piping gel to attach the pattern. To save time we pre-made most of the fondant decorations for this cake, like these flowers. Later we will show you how to work with fondant for this purpose.
Go ahead and cover the bottom tier and then carefully stack the cakes. You may need to use buttercream to secure the two as you did earlier when creating each tier.
Now it’s time for the detailing. Using a round tip on the icing bag make buttons between the two cakes. To start making the rose bush, pipe icing leaves using a number 69 tip. Then add the roses, which are attached to small pieces of wire.
The tree is next. Start by making the general shape from brown fondant and then roll it out to make it flatter. Use the same gel to attach it to the cake. Place on the leaves in the same way as the roses. The playing cards are added to the opposite side and now the cake is really coming together.
Here we’re making the Cheshire cat. The same basic structure can be used to create any of the characters for this cake.
The best way to start is by thinking of the individual shapes that make up each character, from there you can manipulate them to look like you want using tools or your fingers.
Finally, with a few finishing touches, including giving Alice her rightful place at the top of the cake, we’ve finished.
