High-Protein Taco Bowl Recipe: Quick, Easy & Family-Friendly
Hi guys! I’m back with another meal prep video, and this time, I’m sharing my go to high protein taco bowl recipe. It’s one of my family’s absolute favorites – healthy, delicious, and super simple to whip up!

Ingredients

For the base:
1 cup cooked quinoa
1 can (15 oz) black beans, drained and rinsed
1 cup corn (fresh, canned, or frozen)
1 bell pepper, diced
1 cup cherry tomatoes, halved

For the taco seasoning: (I used Siete's taco seasoning for ease)
1 teaspoon chili powder
1 teaspoon cumin
1/2 teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
Salt and pepper to taste

Optional toppings:
Avocado slices
Salsa
Shredded cheese
Fresh cilantro
Lime wedges

Steps:
Cook the quinoa: Prepare 1 cup of quinoa according to the package instructions. Set aside.
Prepare the veggies: Dice the bell pepper and halve the cherry tomatoes. If using frozen corn, heat it up in a skillet or microwave.

Mix the taco base: In a large bowl, combine the cooked quinoa, black beans, corn, bell pepper, and cherry tomatoes.

Season the mixture: Add the chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper. Stir everything together until evenly coated.

Assemble the taco bowl: Divide the quinoa mixture into serving bowls. Add your favorite toppings like avocado, salsa, shredded cheese, or fresh cilantro.

Serve and enjoy: Squeeze fresh lime juice over the top and serve immediately, or store in the fridge for meal prep.
