BALINESE RAW SAMBAL
SAMBAL MATAH BALI

Ingredients:

2 stalks of lemongrass, inner white part, chopped
3 kaffir lime leaves, julienned
10-12 shallots, sliced
2 cloves of garlic, chopped
6-8 red cili padi, chopped
2 fresh red chillies, chopped
¼-½ inch belacan, toasted (optional)
Or 1 tsp belacan powder
½-1 lime / 2-3 calamansi lime (juice)
1 tsp sugar
Salt to taste
4-5 tbsp coconut oil, preferably
Or any cooking oil of your choice

Method:

In a bowl, add in the belacan, lime juice and mix. Then add in all the chopped ingredients and blend them together.
Add in the sugar and some salt. .
Then, finally add in the oil.
Keep it refrigerated, and it can last a week.

Tips: You may decide to either heat up the oil before mixing it with the fresh ingredients or just pour in without heating. You can also remove part of the chilli seeds to reduce its spiciness. (Optional)
Can be eaten with rice, fried/grilled seafood and chicken 👌
