Avial is a traditional South Indian vegetarian dish that's made with a variety of vegetables cooked in coconut oil and eaten with rice.

Ingredients (for 8 servings):
• Coconut (grated) – 2 cups
• Cumin/Jeera Seeds – 1 tsp
• Turmeric Powder – 1 tsp
• Green Chillies (chopped) – 3 medium
• Curry Leaves – 1 string

• Coconut Oil – 1 tsp

• Raw Plantain (cut lengthwise) – 2 cups
• Winter Melon (cut lengthwise) – 1 cup
• Carrot (cut lengthwise) – ¾ cup
• Cucumber (cut lengthwise) – ¾ cup
• Snake Gourd (cut lengthwise) – 1 cup
• Amarakka/Amara Payar (slitted) – ¼ cup
• Elephant Foot Yam (cut lengthwise) – ½ cup
• Onion (sliced) – 1 small
• Green Chillies (slitted) – 5 medium
• Water – 1 cup

• Drumsticks (slitted) – 8 pieces
• Salt – 1 tbsp (or to taste)

• Yogurt (sour) – 2 tbsp
• Coconut Oil – 1 tbsp
• Curry Leaves – 2 strings
