Welcome to Cheese City, home of the AMAZING Skillet MAC AND CHEESE! On today’s episode we will be making the perfect addition to any Thanksgiving meal, who am I kidding... ANY MEAL. Techhhhnically it's a Cavatappi n Cheese, but that's just how I like it.

We use Smoked Paprika and a bit of cayenne to make this skillet mac smokey and spicyyy. We use two different cheeses, dijon mustard, and some other goodies to really set this Mac N' Cheese apart from the rest!

RECIPE:

INGREDIENTS:
• 16 OZ Cavatappi Noodles
• 1 LB cheese shredded, approximately ½ Gouda and ½ Sharp Cheddar
• 2 ½ Cups Whole Milk
• 4 TBSP Unsalted Butter
• ¼ Cup All Purp Flour
• 2 Heaping TSP Dijon Mustard
• 4 TSP Seasoned Salt
• 2 TSP Smoked Paprika
• ¼ TSP Cayenne
• Black Pepper to taste

PROCESS:

Begin by pre-heating your oven to 425°F and bringing a large pot of heavily salted water to boil.
Cook pasta until al dente (ideally it reaches al dente at the same time as your sauce being ready and you can just use a spider to transfer the noodles, but sometimes things don’t go as planned. Consider this your heads up.)

In a 9.5in cast iron pan (or any large heavy bottomed pan/pot) melt your 4 TBSP Unsalted Butter over medium-high heat. Once melted add in the ¼ Cup All Purp Flour. Using a whisk, mix those constantly until the mixture turns a nice toasty golden color. About 3-5 minutes.

Slowly add your milk a little bit at a time, making sure that it is fully incorporated after each addition. Once all of the milk is added, mix occasionally until the mixture approximately doubles in thickness. About 3-5 minutes.

Lower the heat to low, add in all of your spices, some cracks of black pepper, and your Dijon Mustard. Give that a lil mixie mix until it is fully combined. Switch to a wooden spoon and add in ¾ of your cheese, holding ¼ back for topping. Mix until fully incorporated.

Add your al dente noodles to the saucey mixture and mix to combine. If you’re using a 9.5 IN cast iron you can just bake it in this, if not, bake in whatever vessel tickles your fancy. Top with the remaining ¼ chz.

Bake at 425°F for about 10-15 minutes, or until the top is nice and bubbly, crispy, golden brown.
