Kheer is a rice pudding which is very famous dessert in Indian homes. Its main ingredients are rice, milk and sugar further flavored with different nuts and dry fruits. It’s a quick and easy dessert you can enjoy at any time. So, try this easy dessert recipe at any occasion and celebrate happiness.


Other Names:

Rice Pudding, Payasam, Payasa, Phirni, Gil-e-firdaus, Firni


Ingredients:

6 cups Milk (full fat)
¼ cup White Rice
¼ cup Sugar
2 tbsp Raisins (aka Kishmish)
8-10 Almonds (chopped)
8-10 Pistachio (chopped)
¼ tsp Cardamom Powder


Instructions:

1. First take ¼ cup of Basmati rice but you can use any white rice. Then thoroughy wash rice 2-3 times till water runs clear. Now soak them for at least 30 mins, this will help in cooking them faster. Once rice is soaked drain all water and now mash them with hands a little as shown in video so that rice breaks little bit which will help them to cook better and also give nice texture and consistency to kheer.

2. So now lets start making kheer, for this take a heavy bottom pan or a wok. Now add 6 cups of milk and switch on the heat. I am using full cream milk but if you are using skimmed milk you can add ¼ cup of condensed milk or ¼ cup khoya to give rich taste and texture to kheer.

3. Now let it get a boil on high heat, keep stirring in between to make sure milk doesn’t stick to the bottom. When milk gets a boil put heat to low and add washed and drained rice. Now stir them well, put heat to low medium and let rice cook till they become soft and milk gets the right thickness.

4. Just make sure to keep stirring in between to avoid making any lumps and it will also avoid milk and rice sticking to the bottom of pan.

5. After around 25-30 mins, kheer has thickened to the right consistency and texture is also looking good. So add ¼ tsp cardamom powder, 2 tbsp raisins, chopped almonds, chopped pistachios and ¼ cup sugar, these nuts add extra punch to kheer taste. Now mix them well and cook on low heat for another 8-10 mins so that all nuts, sugar get mixed well in kheer.

6. Depending on your rice quality and variety kheer consistency can be too thick or too thin. If its too thick just add ½ cup more milk and give it one boil. And if its too thin then cook it for another few mins till it gets right thickness.

7. Once kheer is ready take it out in a bowl and serve it hot. But if you like it chilled then cover it and keep in refrigerator for 2-3 hrs and then serve it cold.


Tips n Tricks:

1. To make it vegan you can use vegan milk instead of diary milk.
2. You can change nuts to add according to your own choice.
3. You can also use condensed milk instead of full fat milk, but just make sure to add sugar accordingly as condensed milk already contains lots of sugar.
4. To make kheer extra special you can also use khoya or mawa.
