A healthy soup bowl with beetroot and carrot.

Beetroots and carrots help relieve constipation by stimulating the metabolic system. The phyto-nutrients in these veggies help boost the digestive system. Carrots are loaded with fibre that not only balance blood sugar levels, but also keep the gut healthy. Tomato is a source of the antioxidant lycopene, which has been linked to many health benefits, including reduced risk of heart disease and cancer

Ingredients:
Carrot (Chopped) : 1 Cup
Beetroot (Chopped) : 1 Cup
Garlic cloves : 3 (roughly chopped)
Onion (Medium) : 1 (roughly chopped)
Tomato (Large) :1 (Peeled)
Cracked pepper corns : 1/4 tsp
Salt to Taste
Butter (small piece) : Optional

Method-

Roughly chop all veggies
Add three cups of water to a vessel and add all vegetables
Add salt, mix well. Cover the lid and allow to boil for 15-20 mins
Separate the stock and allow the veggies to cool down. Blend it to paste
Add the stock back to the vessel. Add the blended mixture. Adjust consistency as required. Cook for 2-3 mins
Add cracked pepper corns and serve hot
Garnish with a little butter (optional) and decorate with a coriander leaf at center of the bowl.
