One of my favourites when I get take out: BUN THIT NUONG CHA GIO CHAY!

Wait, what? Watch me butcher this pronunciation (so hard!) but basically it's Vietnamese vermicelli bowls. I went ahead and made a vegetarian version of it which is totally customizable! The base is quite simple: chopped lettuce, fresh mint, pickled carrots, chewy rice noodles, spring rolls, marinated crispy tofu, and cucumber all tossed in nuoc nam (Vietnamese fish sauce dipping sauce)! It's so fresh, healthy and easy to assemble. Don't be turned off by the amount of steps or ingredients - it's totally worth it!

Ingredients you'll need:
200g banh pho
1 blk extra firm tofu
1/4 cup fish sauce
2 tbsp dark soy sauce
4 cloves garlic
1 shallot
3 Thai red chilies
1/3 cup sugar
1 tsp lemon juice
1 head green lettuce
1 bunch fresh mint
pickled carrots
spring rolls
1 English cucumber
