African Twist on Bunny Chow - Chakalaka Edition | Flavorful South African Vegetarian Meal | Meatless
Hey guys, welcome back to our channel! Today we're going to be making a delicious South African dish - Chakalaka Bunny Chow. This is a hearty and flavorful meal that's perfect for any occasion. If you've never heard of Bunny Chow before, it's a South African street food that originated in Durban. It consists of a hollowed-out loaf of bread filled with curry and other delicious ingredients. And today, we're going to be showing you how to make a Chakalaka version of Bunny Chow. So, let's get started!

Ingredients:
1 large loaf of bread
1 onion, chopped
2 garlic cloves, minced
1 red bell pepper, chopped
1 green bell pepper, chopped
1 can of diced tomatoes
2 tbsp of tomato paste
1 tbsp of curry powder
1 tsp of paprika
1 tsp of cumin
Salt and pepper to taste
1 can of baked beans
2 tbsp of vegetable oil
Fresh coriander, chopped (optional)
Instructions:

Start by preparing the bread. Cut off the top of the bread loaf and hollow it out, leaving about 1/2 inch of bread on the sides and bottom. Keep the bread that you have removed to use as dipping bread later.
In a large pot or Dutch oven, heat the vegetable oil over medium heat. Add the chopped onion and garlic and sauté until the onion is translucent.
Add the chopped bell peppers and sauté for another 2-3 minutes.
Add the diced tomatoes, tomato paste, curry powder, paprika, cumin, thyme, sugar, salt, and pepper. Stir well to combine.
Add the baked beans to the pot and stir well. Reduce the heat to low and simmer for 15-20 minutes, stirring occasionally.
Once the Chakalaka curry is ready, spoon it into the hollowed-out bread loaf.
Garnish with chopped coriander (if using).
Serve hot, with the reserved bread on the side for dipping.
