Its a short Friday shabbat prep! Well, the video is doing but the prep time was short lol. So excited to take you along for a winter shabbat prep! Shabbat starts early, so we have to prepare quickly. I try to do as much as I can during the week and do prioritize what needs to happen when. I also start before the sun because I had some cooking and cleaning to do. I prepared some food, including mini banana bread muffins (recipe below) and a dessert of cupcakes with buttercream cookie frosting (recipe below). I also had a little time to take the kids out for a late afternoon walk and just in general enjoy the day. Though there were a few curveballs, we just kept on going and made it to Shabbat! Thank you for coming along for this day in my Orthodox Jewish life!

Banana Mini Muffin Recipe (Better Homes and Gardens Banana Bread)

Bake for 30 minutes instead of an hour for the mini muffins. I used gluten free flour instead of regular flour. Great recipe either way!

"Butter"cream Frosting
1 cup smart balance
1 lb powdered sugar
10 cookies (crunchy cookies)
2 tbsp soy milk
1 tsp vanilla
Pulverize the cookies and set aside. Put cold smart balance in the mixer, slowly add the sugar till all is mixed in. Add the vanilla and soy milk. Mix. Add the cookies and mix. Store in an icing bag until ready to serve.
