Persian Mutton Korma:
Persia, now Iran, is fountainhead of delectable cooking. Persian mutton Korma is fine example of Persian cooking.

1. Mutton pieces. 500 gms.
2. oil 50 gms
3. Ghee. 50 gms
4. Onion. 80 gms
5. Salt. 1.5 to 2 Tspoon
6. Coriander powder. 6 Tspoon
7. Red chilli powder. 6 Tspoon
8. Kashmiri Red chilli powder 2 Tspoon
9. Turmeric powder 1 Tspoon
10. Pepper powder. Half Tspoon
11. Ginger scraped. 20 gms
12. Almonds. 10 -12
13. Pistachios. 20 -25
14. Apricots. (Jardalu) (optional) 3
15. Raisins whole.(kishmish) 12-15
16. Pinch of saffron diluted in water
17. 5 almonds & 15 pistachios for garnishing
18. Curd. 100 gms
19. Malai (fresh milk cream) 50 gms
20. Elaichi (cardamom) powder half Tspoon
21. Kevda water (screw pine water) 2 Tspoon

Method:
1. Finely chop onion.
2. In a bowl take 50 gms Malai (fresh milk cream) and mix Elaichi powder, Kevda water and saffron diluted in water.
3. Scrap 20 gms ginger.
4. In a Handi or pot, heat oil and ghee and when hot add chopped onion.
5. When onion is golden brown, add cleaned and washed mutton.
6. Add salt, turmeric powder, red chilli powder, Kashmiri red chilli powder, coriander powder and black pepper powder.
7. Mix well and sauté for 7-8 minutes.
8. Add 1.5 cups of water.
9. When gravy bubbles, cover the lid and cook for 30 (15 + 15 ) minutes on medium flame.
10. After 15 minutes, open the lid and check the mutton. If it sticks to bottom, add splash of water.
11. Add curd on low flame. Mix and stir well.
12. Cover the lid and cook for 15 minutes on low flame.
13. We have cooked mutton for total 30 minutes.
14. Open the lid and add malai saffron mix
15. Mix well and cover the lid.
16. Pour water on lid and cook for 70 minutes on low flame.
17. In between check the mutton for 2-3 times. If it sticks add some hot water.
18. After 70 minutes open the lid and check the mutton whether it is tender or not.
19. Our mutton is tender.
20. If mutton is not tender, cook for some more time.
21. Cover the lid, turn off the gas and let the mutton settle for 5 minutes.
22. Open the lid and garnish with crushed almonds and pistachios.
23. Savour the taste of Persian Mutton Korma with rice or roti.
