Here we compare our traditional Taiwan Dong Ding Oolong Tea with our standard/modern version. Traditional Dong Ding Oolong is well oxidized, but not roasted — offering a savory, pastry and sweet profile. Modern (or competition style) Dong Ding Oolong undergoes medium to heavy roasting, which brings out nutty, pinewood, and fire-roasted yam notes.

The modern version of Dong Ding Oolong came about as a result of merchants roasting previous seasonal batches of tea, and offering fresh new batches along with roasted, and sometimes aged batches. The roasted version eventually became more popular, and led to becoming the quality standard for Dong Ding Oolong Tea competitions.
