To make these you will need:

1kg red potatoes
60ml olive oil
7 garlic cloves
80gr grated vegan cheese
1tsp oregano
1tsp thyme
generous pinch of salt & pepper
extra oil for greasing (any oil that you prefer)

Cut your potatoes into halfs or quarters first. I'm using red potatoes but you can use any kind that you like. Add the potatoes to some salted boiling water and parboil them for 6-8 minutes. Parboiling means just cooking the potatoes halfway through which will make them super crispy once roasted.

In the meantime mix the rest of the ingredients into a dressing.

Drain the parboiled potatoes and add them to the dressing. Mix until all the potatoes are coated.

Grease a baking sheet with some oil and spread the coated potatoes out onto this.

Roast in the oven for 15 minutes on 200C (392F) on the lowest rack of the oven. Then take them out, flip the potatoes and roast for another 20 minutes on the same temperature in the middle of the oven this time.

Enjoy with your roast dinner or as a side dish!
