Last week Ashley Christensen, one of America’s most acclaimed chefs, taught me a recipe that her family has made for generations, a variant of stewed squash with onions. Everyone around the table gobbled it up.

I have made this 3 times since then, and I found that the leftovers tossed with pasta and lots of parmesan makes the dish feel so right. HUGE SCORE. Then I tried mixing some good parmesan with the squash, stuffed it in shells, glazed it with some pureed over-ripe tomatoes (not a lot) and baked it for 15-20 minutes and it was magical. Magical!

So the next time someone tries to unload a sack of zucchini on you, accept it with a smile. Roast it, stuff it, fry it, or just sauté it with onions like your grandmother used to. Then do it again tomorrow. And the next day. It’s summer, after all, and squash waits for no one.
