Ask anyone from the 60s and 70s and they will always bring up Anadi cabin for their Moghlai porota, made with duck eggs. Sounds so special. We went on a cabin food trail and picked up 5 cabin specialties- the first one is Mughlai Paratha (pronounced as moghlai porota). Basanta Cabin was our first stop and the moghlai there was truly brilliant with a thick filling of eggs and a spicy alur torkari. Legend has it that Adil Hafiz Usman, a Hadrami Arab by descent, created it, possibly inspired by Turkish Gozleme. Emperor Jahangir was so pleased with the result that he rewarded Usman with a jagir in Bengal and 1001 gold coins.
The recipe was a closely guarded family secret for centuries until Usman’s descendants brought it to Bengal during the British Raj. From Dhaka and Murshidabad (the administrative cities during the Mughal times), it eventually reached Kolkata when the city became the capital of the Bengal Province, where it eventually became a staple of cabin menus and popular street food.
Though variations like Mumbai’s Baida Roti or the Nizami Paratha exist, Kolkata’s Moghlai Porota remains distinct. Have you tried it or something similar in your city? Let us know in the comments!
