Ilish is special to any Bengali. During the Ilish season we hardly give importance to any other fish. Of all the two-three months of its availability, it becomes a staple in every Bengali household. When cooking Ilish or Hilsa, there are a great variety of preparations that are equally loved by us. From mustard and curd to brinjal and raw banana, the options are innumerable. But another thing, which goes amazingly well with Ilish mach, but is on the verge of extinction (thanks to its unavailability and the incapability and lack of knowledge of our generation) is Kochu Shak. All Bengalis love fish and most of them can't deny as they want 'Macher Jhol' (fish curry) at least everyday. We can use fish head in fish curry as well as in separate recipes with vegetables, where fish head added some extra aroma and essence. There are so many recipes cooked by using fish head and this is one of the very luscious, adorable and traditional Bengali delicacy, " Illish macher matha diye kochu shak" (taro / colocasia greens with Hilsa fish head). Illish mach (hilsa fish) has its own taste, smell and flavor. This is a very simple dish, yet fabulous! Best goes with steamed rice only. Ilish Macher Matha/Muro Diye Kochu Shaak is an authentic Bengali dish where Taro stems are cooked in spices with the fried head of Hilsa fish. This dish originated from Bangladesh and is one of the most popular dishes in Bong houses. It is a super delicious and simple recipe. You would require very limited ingredients to prepare this dish. Bengalis are famous for eating fishes and they have a special soft corner for Hilsa fish. Hilsa fish is famous for its unique taste and flavour. Many famous dishes are prepared with Hilsa like Sorshe Ilish, Ilish Bhapa, Barishali Ilish and many more.
Hilsa fish head is also as tasty as the fish. Many popular and delicious dishes are prepared with Hilsa fish head like Ilish macher matha diye bandhakopi, Ilish macher matha diye pui shaak, Ilish macher muro diye moong dal and many more. These are all pure Bengali delicacy though.
Ilish Macher Matha Diye Kochu shak is a traditional Bengali dish made where taro stems or kochu’r shak are cooked in aromatic spices with the fried head of Hilsa fish. This dish is one of the most popular dish in most of the Bengali households. This is a very simple and easy to cook recipe at home. This delicious Bengali recipe taste best when served with hot steamed rice. Ilish Macher Matha Diye Kochur Shak which is an absolute treat to your taste buds.


Ingredients:-

1. Kochu shak - boiled (Taro Stems)
2. Mustard oil
3. Hilsa fish head
4. Cumin Powder
5. Salt to taste
6. Turmeric powder
7. Green chili
8. Sugar to taste
9. Dry Red Chili
10. Bay Leaf
11. Cumin Seed
12. Red Chili Powder
