SERVES 16
TOTAL TIME: 48 MINUTES, PLUS COOLING

1 x Decadent chocolate cake
cocoa powder, for dusting
600ml double cream
2 teaspoons vanilla bean paste
1 tablespoon icing sugar
1 x 370g jar of cherry jam
1⁄2 x 370g jar of black cherries in kirsch 100g roasted chopped hazelnuts

1. Make the Decadent chocolate cake and bake in a 30cm x 40cm greaseproof-paper-lined tray at 180°C fan/350°F/gas 4 for 15 minutes exactly – until just springy to the touch and gooey in the middle. Confidently turn out on to greaseproof paper dusted generously with cocoa. Leave to cool completely.
2. In a large bowl, whisk the cream and vanilla until soft peaks form, then sift and stir in the icing sugar.
3. Peel away the greaseproof the cake was baked on. Spread the jam all over the cake, drizzle with kirsch juice from the cherry jar and spread over three-quarters of the cream. Scatter over most of the hazelnuts and cherries.
4. Tightly roll up the filled sponge lengthways, using the base greaseproof to help you (it will bust and crack a bit, but it’s all good).
5. Decorate the roll with the remaining cream and cherries, shave over extra chocolate, if you like, sprinkle over the remaining hazelnuts and drizzle with 2 tablespoons of kirsch juice. Serve right away, or pop in the fridge until needed. If making ahead, remove from the fridge 20 minutes before serving.
