✅Ingredients

For the Vegetable Broth

6qt Water
2 Stick of Celery
2 Carrots
1 White Onion
2 TSP Salt
1 TSP Pepper
Italian Parsley
1 TBS of Extra Virgin Olive Oil

✅For the Meat Filling

2 Italian Sausage (pork and fewer spices as possible, no fennel!)
1lbs of Grounded Beef (you can ground your own from a tough part of the cow)
1 cup of Fresh Peas
1 TBS Extra Virgin Olive Oil
2 Garlic Cloves
2 Bay leafs
1/2 Dried Chile (Chile de Arbol works if you can't find Italian Cayenne)
1/2 TSP of Cinnamon
Fresh Nutmeg

✅For the Rice

2 cups of Arborio Rice
A pinch of real Saffron (in a bit of hot water, leave it there for about 1h)

✅For the Breading

Pastella (1 Cup AP Flour + 1 Cup of Water)
1 Cup of Breadcrumbs
