Hariyali Tawa Pulao

Prep time: 15-20 minutes
Cooking time: 35-40 minutes
Serves: 4-5 people

Ingredients:
For Rice
SELLA BASMATI | सेला बासमती चावल 1 CUP
SALT | नमक A LARGE PINCH
TURMERIC POWDER | हल्दी पाउडर 1/4 TSP
Spinach Paste
SPINACH LEAVES | पालक 1 SMALL BUNCH
SALT | नमक A PINCH
FRESH CORIANDER | हरा धनिया A SMALL HANDFUL
MINT | पुदीना 10–13 LEAVES
GINGER | अदरक 2 INCH
GARLIC | लहसुन 10–12 CLOVES
GREEN CHILLI | हरी मिर्च 2 NOS.
Taw Pulao
BUTTER | मक्खन 2 TBSP
OIL | तेल 1 TBSP
CUMIN SEEDS | जीरा A LARGE PINCH
ONION | प्याज़ 1 MEDIUM-SIZED (SLICED)TOMATO | टमाटर 1 SMALL-SIZED
CAPSICUM | शिमला मिर्च 1 MEDIUM-SIZED.CABBAGE | पत्ता गोभी A LARGE HANDFUL
GREEN PEAS | मटर 1/3 CUP (BOILED)
POTATO | आलू 1 NO. (BOILED & DICED)
PAV BHAJI MASALA | पाव भाजी मसाला 2 TSPTURMERIC POWDER | हल्दी पाउडर 1/4 TSPCORIANDER POWDER | धनिया पाउडर 1 TSP
SALT | नमक TO TASTE
SUGAR | शक्कर A PINCH
HOT WATER | गरम पानी A SPLASH
KASURI METHI | कसूरी मेथी A PINCHLEMON JUICE | नींबू का रस OF A SMALL LEMON
FRESH CORIANDER | हरा धनिया A HANDFUL (CHOPPED)
GARAM MASALA | गरम मसाला A PINCH
Method:
Wash the basmati rice 3-4 times until the added water turns clear & soak it for 30-45 minutes.
Add water into a large stock pot & bring it to a rolling boil & add the salt & turmeric powder.
Further drain out the water from the soaked rice & add the rice into the stock pot, stir it gently & cook until they are almost cooked.
To check the rice just take out & bite into a few grains, they should be cooked but still have a slight bite, strain the rice out using a large spider or a sieve & transfer it onto a large sieve or a plate.
After you have transferred all the rice, fluff it up using a fork so that all the excess steam escapes & the carry forward cooking stops. Let the rice rest & cool down completely. Meanwhile yo in can do the other prep.
Blanc the spinach in hot water for 15-20 seconds then transfer it into ice cold water.
Add the blacnhed spinach into a mixer jar along with the remaining ingredients of the paste & blend it into a fine paste.
Set a tawa or any flat bottomed vessel over high flame & let it get hot.
Add butter & oil, let it heat up & then add cumin seeds & onions, stir well & cook the onion over high flame until they turn slightly light golden brown.
Then add all the remaining veggies, stir well & cook for 1-2 minutes.
Add the spinach paste along with all the powdered spices, salt & sugar, add a splash of hot water & cook all the ingredients for 3-4 minutes.
Then add the cooled down rice, along with kasuri methi, lemon juice, garam masala & fresh coriander, stir well.
Your delicious Hariyali Tawa Pulao is ready, serve hot with some raita.
