Welcome to Soil & Sazón! I’m kicking off my Cooking through Mexico: The Cookbook series with Tlacoyos! A corn cake filled with a chipotle bean purée, topped with garlic lime flank steak, roasted tomatillo salsa, onions, cilantro and feta (cotija if you have it) that you can eat with your hands!

INGREDIENTS:

INSTANT POT BEANS:
-1 cup dry beans
-2-3 cloves of garlic
-1/4 of an onion
-1 bay leaf
-Salt to taste

MASA:
-4 1/3 cups masa harina
-1 tsp salt
-4 cups of warm water

BEANS:
-2 cups of cooked beans
-2-3 chipotle in adobo
-1 avocado leaf

GARLIC LIME STEAK
-2lbs flank steak
-1 & 3/4 onion sliced
-12 cloves garlic
-2 tsps peppercorns
-2 tbsps oil
-1 lime-juice
-Salt to taste
