Lemon Loaf

Recipe:

Loaf
230g sugar (1c)
zest of 2 lemons
3 whole eggs
115g double/heavy cream (1/2c)
* in this recipe, i used buttermilk substitute by adding 1/2 tbsp of vinegar to 1/2c milk
185g cake flour (1 1/2c)
* i substituted 1 1/2c all purpose flour and 1 1/2tbsp cornstarch
(make sure to remove 1 1/2tbsp all purpose flour before adding the 1 1/2c cornstarch)
1 tsp baking powder
1/2tsp salt
60g neutral oil (1/4c)
* i used canola
1tsp lemon extract

Syrup
1 part lemon juice
1 part water
sugar (adjust to your liking)

Glaze
lemon juice
powdered sugar
