GAVRAN CHICKEN RASSA
A rustic, full-flavoured chicken curry made with desi (country) chicken, slow-cooked in traditional spices, garlic, and dry coconut masala. Spicy, earthy, and loaded with local flavour.

Garlic Paste 1½ tbsp
Ginger Paste 1½ tbsp
Coriander Leaves ½ cup chopped
Curd 1 cup
Turmeric Powder 1 tsp
Salt To Taste
Water 1 ltr
Coriander Seeds 1 tbsp
Cumin Seeds 1 tsp
Royal Cumin Seeds 1 tsp
Fennel Seeds 1 tbsp
Star Anise 1
Cinnamon Stick 1 inch
Green Cardamoms 3
Nutmeg A small piece
Bay Leaves 2
Black Peppercorns 10
Cloves 5-6
Mace 1
Stone Flower 1 tbsp
Sesame Seeds 1 tbsp
Poppy Seeds 1 tbsp
Onions 2 chopped
Oil 2 tbsp
Dry Coconut ¼ grated
Guntur Dried Red Chillies 10

Chicken Stock as required
Water ½ ltr
Salt To Taste
Coriander Leaves 2 tbsp chopped
