Eggplant with Cheddar Delight

Ingredients:
5 small eggplants
3 juicy tomatoes
1 clove of garlic
100g cheddar cheese
3 tablespoons olive oil
1 teaspoon chili paste
1 teaspoon boiled water
Salt, black pepper
Oil for frying

Directions:
1. Prep the Sauce: Grate the tomatoes and garlic. Heat 3 tablespoons of olive oil in a pan, add the grated tomatoes and garlic, and cook until softened.
2. Enhance the Flavor: Dissolve 1 teaspoon of chili paste in 1 teaspoon of boiled water and stir into the tomato mixture. Season with salt and black pepper to taste. Remove from heat once thickened.
3. Prepare the Eggplants: Slice the eggplants in half lengthwise and soak them in salted water for 15 minutes. Drain, pat dry, and fry in hot oil until golden.
4. Assemble: Pour the prepared sauce into a baking dish, place the fried eggplants on top, and bake at 180°C (350°F) for 20 minutes.
5. Finish with Cheese: Sprinkle grated cheddar over the eggplants and return to the oven. Bake until the cheese is melted and bubbly. Serve hot and enjoy!
