Ingredients
Oil: 3-4 tbsp
Chopped green chilis: 2 tsp
Chopped green beans: 2 tbsp
Chopped capsicum: ¼ cup
Chopped Yellow bell pepper: ¼ cup
Chopped Red bell pepper: ¼ cup
Chopped purple cabbage: ½ cup
Chopped cabbage: ½ cup
Leftover rice: 2-3 cups
Soy sauce: 1 tbsp
Vinegar: 1 tsp
Green onions: for garnish

Instructions to make rainbow rice step by step

1. Heat Centennial stainless steel kadai. Add some oil into the kadai with some chopped green chillies and chopped green beans. Saute them for a minute or so.
2. Now add some chopped green capsicum, chopped yellow bell peppers, chopped red peppers, chopped purple cabbage and chopped cabbage.
3. Season it with salt and pepper and saute everything nicely.
4. Add the leftover rice to the pan, with some soy sauce and vinegar. Toss and stir it to mix everything together. Serve the rice hot with some chopped coriander on top.
