This Italian sausage with peppers, mushroms and onions is a hearty Italian dish that combines
mild-sweet or hot Italian sausage with a flavorful marinara sauce
and fresh garden vegetables.

Ingredients, 4 servings:

1 lb sausage links,
8 oz pasta (your preference)
your preference mild sweet or hot Italian
2 tbs olive oil
1 large bell pepper red or yellow
1 cups mushrooms diced
1 large onion diced
2 garlic cloves chopped
1/4 cup white wine
8 oz diced tomatoes (undrained)
1/2 tsp dried Italian seasoning (optional)
1/4 tsp chili pepper (optional)
1/2 tsp chopped parsley (for deco at the end)
salt and pepper to taste

Directions:
Start by browning the sausage:
Heat a large skillet over medium heat, add 1 tablespoon of olive oil and the sausage. Cover and cook for about 5-6 minutes, remove cover, turn sausages and cook an additional 5 minutes or so, until sausage is browned. NOTE: Sausage does not need to be cooked all the way, it will cook more after.
Remove sausage from pan and set aside.
Return the skillet to medium/high heat add onion, garlic, pepper, mushrooms and an additional tablespoon of olive oil if pan seems dry).
Cook until onion is soft. Season with salt and pepper.
Add the wine and continue to cook until it is reduced by half.
Add the sausage, and tomatoes, Stir everything together.
Bring just to a boil and then simmer about 10-15 minutes until sausage is cooked through and sauce is thickened up to your liking.
While simmering, cook the pasta of your choice, according to package, serve over or with pasta.
