Ingredients
1. Gingelly Oil - As needed
2. Red Chili - 6 nos
3. Channa Dal - 1 tbsp
4. Urad Dal - tsp
5. Coriander seeds - 1 tbsp
6. Cumin seeds - 1 tsp
7. Methi seeds - pinch
8. Shallots - 10 nos
9. Spinach - bunch
10. Tamarind extract - 1 big marble size
11. Toor dal cooked - 1/4 cup

Method
1. Fry Red Chili, Channa dal, Urad dal, Coriander seeds, Cumin seeds and Methi seeds in oil till golden
2. Pound roasted spices in a mortar and pestle to a coarse powder
3. Fry shallots till translucent
4. Add spinach, cook till wilted
5. Add tamarind extract
6. Mix cooked toor dal and punded spices and add to pan
7. Bring to a boil and simer 10 min
8. Temper and serve hot.
