I clearly remember the first time I took a bite out of a chocolate chip cookie, at a time when it was still something new and, had an immediate connection to it. Every one of us has had their special memories with their favorite cookies, a seemingly simple yet extremely special confection. After having hundreds of them from a number of bakeries, I knew I had to give a shot at making one myself and that's where it started.

I found a good recipe online, added my touch to it, and baked the first batch, which turned out to be quite nice and matched a basic chocolate chip cookie. After making a batch for friends, I realized that the cookies didn't maintain their texture over time and got really coarse and rubbly. With every passing batch, I noticed and learned what the role of each element was in making a cookie perfect - how white sugar spreads the cookie and makes it crispier whereas brown sugar makes it chewier, just how it should be.

Something else I observed was how people craved the parts with molten chocolate in the cookies, which were never enough with the tiny chocolate chips. That's when I thought and read about using chocolate chunks instead of chips inside the cookies and tried it out, and was introduced to a cookie beyond any I'd ever had - having large pockets of molten chocolate in every bite instead of small bits. Further reducing the bake time gave it it's classic soft and gooey texture which changed my idea of a chocolate chip cookie completely.

And, for the people finding a healthier version, chocolate chip cookies aren't supposed to be healthy, they are supposed to be delicious.
