1 C. Freshly grated Sharp white cheddar cheese
1 C. Freshly grated Gruyère cheese plus extra for topping (your choice of cheese)
1/3 C. Finely chopped onions
2 medium garlic cloves (finely minced)
5 Tbsp Butter
4 Tbsp All purpose flour
1/8 tsp ground nutmeg
1 tsp salt or as needed
Pepper as needed
2 1/2 C. Whole milk
