Описание к видео One-of-a-Kind Flavour - Thai Boat Noodles

In today's episode, Rinda shares with us a unique and staple street – or canal – food: Thai Boat Noodles! Boat noodles, known as "Kwetiau Rua" in Thai, originated in the canals and water markets in Bangkok, Thailand. Noodle boats would float along the canals and merchants would make the dish on the spot, fresh and delicious for the lucky customers who happened to stop by.

If you are planning to have friends come over to your home, this "Kwetiau Rua" recipe is the best for your gathering. It’s may seem like a lot of work, but with proper planning its an easy and worthwhile venture. Ensure that you do your grocery shopping a day ahead of time, as you might have to visit two or three Asian grocers (its depend on where you live) to get what you need. You won’t be disappointed! 😎

Boat Noodles (Kwetiau Rua) – ก๋วยเตี๋ยวเรือ - for 6 servings

Ingredients:

1 kg of mixed Beef neck bones, bones with marrow and Pork neck bones
16 Cups of water. This will yield about 6 servings of noodle soup.
1 Whole sweet cooking onion – chopped
One handful of cilantro stems - tie them in a bundle with cotton string if possible, for removal from the soup later
1 Whole palm sugar (about 8 grams)
110 g - (1/2 package) of Thai instant spicy noodle soup powder - Gosto Boat noodles seasoning – available at Asian supermarkets or at Amazon.ca – see video.
1 tbsp of sea salt
1 Package of Beef balls - Bo Vien about 454g (10 beef balls per pack) – cut into four
1 Pound of sliced fresh beef – For this recipe I used fresh sliced Angus beef or you can use tender parts of fresh beef sliced, ask the Butcher to slice it for you. Or buy fresh sliced frozen beef.
160 g of Morning Glory - washed and cut into about 2” pieces
1 Kg of beansprouts – washed


Garnish:

One cup of Chopped cilantro, green onion and sawtooth culantro

Condiments:

Fresh mixed Thai chili in vinegar - See Thai Kitchen 101 playlist for recipe
Roasted Thai Chili - See Thai Kitchen 101 playlist for recipe
Fried pork rinds or pork Chicarrones.

Tools:
You will need a noodle strainer and tongs/cooking chopsticks to handle the noodles.

Cooking the broth:

Add 16 cups of water to a large pot and bring to boil. Add mixed washed beef and pork bones into the boiling water and let it boil for 5 minutes. Scoop out all the foam/scum that collects on top of boiling soup bones (see video). Cover it, reduce heat to medium low and let it cook for 45 minutes or an hour.

Add chopped cooking onion, palm sugar, salt, cilantro stems, Beef balls and Boat noodles seasoning into the broth. Turn up the heat to let the soup boil. When it boils reduce the heat to simmer and let it cook for another 5 minutes.

Noodles:
1 ½ Package of Thai thin noodles – about 454g per pack (if you are big eater you may want to cook 2 packages of Thai thin noodles. Soak the noodles in hot water for 4-5 minutes, then drain and set it aside.

How to cook vegetables and noodles:

In a medium pot, add 12 cups of tap water and brining to boil. Fill noodle strainer with a serving of noodles and dip it in boiling water for 4-5 seconds or until the noodles are softened (if you like firm noodles, dip the noodles in hot water for 3 seconds) then transfer to serving bowl. Add about 1 ½ cup of cut morning glory and beansprouts into the noodle strainer and quickly dip in boiling water for 1-2 seconds. Transfer to serving bowl, then add about 1 tsp of fried garlic in oil on top of the noodles, see video.

Add about 3-4 slices of beef liver into the noodle strainer and dip it in the simmering soup broth for 30 seconds, then transfer to your serving bowl. Add about 3-4 fresh sliced beef into the serving bowl, then pour over the simmering soup broth into the bowl - enough to cover the fresh red meat. Add in 4-5 meat balls from the broth as well.

Garnish with chopped cilantro, sawtooth culantro and spring onion before serving. We serve this Kwetiau Rua with pork rinds on the side.

Place all of condiments on table, so your guest will have choices to add more spice or sour flavours into their Thai Boat Noodles soup.
