➖ Recipe ➖

Ingredients -

10 - Large Free Range Eggs
1/2 Cup (150g) - Mayonnaise
5g (0.2oz) - Fresh Dill
3g (0.1oz) - Chives
1 - Spring Onion, Thinly sliced
1 tsp (10g) - Dijon Mustard
1/2 (1.5g) - Paprika
Salt and Pepper

Bread and Fillings -

Bread of Choice
Butter
Lettuce
Tomato (Optional)
Red Onion (Optional)

Method -

Bring a pot of water to a boil and gently add the eggs. Cook for 10 minutes, remove and place into ice cold water. Peel the eggs under running cold water and place the peeled eggs into a bowl.

Mash up the eggs, concentrating on the yolks and leave the whites slightly larger for texture. You can completely mash it if you prefer. Add in the remaining ingredients and mix everything really well. Check seasoning and adjust accordingly.

Butter your bread of choice, add a thick layer of the egg salad and top with lettuce and any optional ingredients. Close the sandwich and slice. Dig in.
