I improvised and created this amazing beef casserole with Tex-Mex flavours. Using ground beef, homemade taco seasoning, and leftover veggies from pizza night, I whipped up a hearty, cheesy dish featuring hominy grits and pickled jalapeños. Watch as I take you through the steps and show how easy it is to adapt your favourite ingredients into a brand-new meal. Whether you love Tex-Mex or Italian-American flavours, this casserole can easily be customized to your taste!

Ground Beef And Grits Casserole
Ingredients:
Grits:
250 mL (1 cup) hominy grits
250 mL (1 cup) water
500 mL (2 cups) milk
Pinch salt
Handful chopped pickled jalapeños
Handful grated cheese
(cook according to package instructions)
500g (1 lb) ground beef
30 mL (2 Tbsp) Taco / Tex Mex seasoning
500 mL (2 cups) chopped mushrooms
1 large onion, chopped
1 hot pepper, chopped
1 bell pepper, chopped
2 stalks celery, chopped
Salt to taste
2 - 284 mL cans RoTel tomatoes
1 - 113 mL can chopped Hatch chillies
Handful grated cheese
Method:
Preheat oven to 180ºC (350ºF).
Cook the Grits / polenta / cornmeal according to package directions, with the addition of jalapeños and cheese at the end.
In a large frying pan, brown the ground beef, and then add the seasoning, mushrooms, onion, peppers, celery, and salt.
Cook until the onions are translucent.
Then stir in the Rotel, and Hatch chillies.
Continue cooking for 15 minutes or so.
Transfer the grits to a 9x9 baking dish, and make an even layer.
Pour over the meat mixture and sprinkle cheese on top.
Place in the oven and bake for 30 minutes.
