Anda Vegetable Paratha

Ingredients:
Eggs 6
Milk 3 cups
All-purpose flour 3 cups
Carrots (shredded) 1/2 cup
Tomatoes (chopped) 1/2 cup
Capsicum (chopped) 1/2 cup
Onion (Chopped) 1/2 cup
Green onion (chopped) 1/2 cup
Green chilies (chopped) 2 tbsp
Potatoes (Shredded) 1/2 cup
Green coriander (chopped) 1/2 cup
Salt 1 tbsp
Black pepper powder 1 tbsp
Red chili powder 1 tsp
Soy sauce 2 tbsp
Chili sauce 2 tbsp
Red chili flakes 1 tbsp
Mozzarella cheese (shredded) as required
Black olives (chopped) 1/4 cup

Directions:
1. In a bowl add eggs and whisk them well. Add flour, milk and beat until no lumps remain.
2. Add carrots, tomatoes, capsicum, onion, green onion, green chilies, potatoes, green coriander, salt, black pepper powder, red chili powder, soy sauce, chili sauce, red chili flakes, black olives and whisk it well again.
3. On a preheated pan add a layer batter, then add cheese and cover it with second half portion of the batter.
4. Cover it with lid and cook each side for 3-4 mins over low flame.
5. Your Anda Vegetable Paratha is ready. Serve and enjoy.

Cooking time: 15-20 mins
