Recipe:

Step 1: Make the carnitas
Ingredients
* 4 lbs lard
* 8 lbs pork shoulder
* 4 lbs pork belly
* ½ cup salt
* 3 oranges cut in half
* 2 limes cut in half
* 3 cinnamon sticks
* 2 onions peeled and cut in quarters
* 1 head garlic, whole, sliced in half
* 2 cups milk
* 1 bottle Mexican Coke

1) Add lard to a big-ass stock pot and heat on high.
2) Cut the pork into chunks about 5 inches by 5 inches, then season heavily with salt.
3) Add the pork to the lard and let cook for about 15 minutes, until browned.
4) Turn the heat on low, then add oranges, limes, cinnamon, garlic, and milk.
5) Turn the heat down to low and simmer for 4 hours.
6) Turn the heat back to high and add in Mexican coke. Cook for 15 minutes, until pork is crispy and caramelized.
7) Remove from liquid and chop with cleaver.

* 1 big-ass stock pot
* Big cutting board
* Boning knife
* Spider
* Cutting board
* Cleaver

Step 2: Make the habanero salsa
Ingredients
* 2 habaneros
* 1 tomatoes
* 2 orange bell peppers
* 1 onion
* 4 cloves garlic
* ¼ c vinegar
* 2 limes
* Salt
* 2 corn tortillas
* Cilantro and onion

1) Add all the ingredients to a bowl and toss with oil and salt.
2) Put on a sheet pan and broil on high until blackened, turning half way through, about 50 minutes each side.
3) Like sorta half peel off the burnt skin and remove the seeds from the bell peppers.
4) Rough chop the veggies then add to a blender or food processor with lime juice, water, and vinegar.
5) Pulse to blend, making sure not to puree the salsa too finely.

* Large mixing bowl
* Sheet pan
* Tongs
* Cutting board
* Knife
* Vitamix

Step 3: Roll the burrito
Ingredients
* 20 big-ass tortillas
* Big-ass bowl of queso fresco
* 1 gallon crema in a ziploc bag

1) Arrange tortillas staggered on each other until it measures 10 ft 6 inches in length.
2) Add beans, rice, carnitas, salsa, guac, queso fresco, and crema.
3) All 4 of us simultaneously roll the burrito up and fold.
4) Use clothing irons to seal off the fold.
5) Roll it in foil. Slice and enjoy.
