Dill Ranch Ruffle Chips

Making homemade potato chips can be tricky. The are a few factors that can make or break delivering a chip that is crispy, not soggy and not burnt.

One of the keys is a vinegar blanch. We have made many chip recipes, and have blanched in both water and oil. This recipe is blanched in water and vinegar. the chips do not burn if cooked at the right temperature and come out with a nice blond color.

Once you have mastered the chip, use any combination of seasonings your palate prefers.

Read the method below to reach a nice crispy chip that is not soggy and keeps a beautiful color and crisp.

Recipe:
Ingredients:
4-5 each- medium russet potatoes
1 cup- white vinegar
Salt
canola oil for frying

Method:
Peel potatoes and slice on a mandolin using a 1/8 inch serrated cut. this makes the ruffle style chips.
Soak potatoes in cold water and salt for 30 minutes.
Bring a large pot of water to a boil
Add 1 cup of white vinegar and 2-3 TBSP of kosher salt.
Blanch the potatoes in small batches (10 each) for about 3-4 minutes.
Remove the potatoes and place on a sheet pan lined with paper towels and pat dry.
Make sure your potatoes are completely dry before moving to the next step. It may take over an hour to dry the potatoes.
One method we find to dry the potatoes is placing them next to a fan to dry. Flip them as needed.
Add canola oil to a pot and heat to 330F-340F.
Fry potatoes in small batches (10 each- depending on the size of your cooking vessel). Move and stir the chips as they fry.
Once the chips stop bubbling, they should be ready. Should take about 4-5 minutes. remove 1 chip and taste to make sure they are crispy enough to your liking.
Remove the chips and place in a mixing bowl lined with paper towels to drain the oil.
Season liberally and toss.

Recipe:
For the Dill Ranch
Ingredients:
1/4 cup- buttermilk powder
1 TBSP- kosher salt
2 tsp- dried dill
1/2 tsp- black pepper
1 1/2 tsp- dried parsley
1 1/2 tsp- onion powder
1 tsp- garlic powder
3/4 tsp- MSG

Method:
Add al of the ingredients together and mix well.
