CRISPY GARLIC PEPPER PORK RIBS | Irresistible Crispy-Outside, Tender-Inside Recipe (You’ll Lick Your Fingers!)

Crispy Garlic Pepper Pork Ribs
Ingredients
500 grams spareribs
1 teaspoon rice wine
Some ginger (sliced) and green onions (cut into sections)
Ground Pepper 1 tsp
Salt and pepper powder 1tsp
Sugar 1 tsp
Light soy sauce 1tbsp
Oyster sauce 1tbsp
5-6 cloves garlic (minced, for making garlic water and for sautéing))
1 egg yolk
1.5 tablespoons potato starch
Cooking oil (for marinating and frying)
Additional minced garlic
Onions (chopped, for sautéing)
Red chili peppers (diced, for sautéing)
Instructions
Prepare garlic water: Mince the garlic, add a little water, and let it sit for 5 minutes to fully release the garlic aroma.
Marinate the spareribs:
Rinse the spareribs thoroughly.
In a bowl, add the spareribs, rice wine, ginger slices, green onions, pepper, salt and pepper powder, sugar, light soy sauce, oyster sauce, and the prepared garlic water.
Mix well, squeeze out the juices from the ginger and green onions, then remove the ginger and green onions.
Add the egg yolk, potato starch, and a bit of cooking oil. Mix again until the spareribs are evenly coated.
Marinate for 30 minutes.
Fry the spareribs:
Heat oil in a pan to 170°C (test by dipping a shallot or chopstick in the oil – it’s ready when small bubbles form around it).
Add the marinated spareribs one by one. Let them set for a moment before turning.
Fry over medium-low heat for about 8 minutes until the surface turns golden.
Finally, turn up the heat to high and fry for 1 minute, then remove the spareribs and drain excess oil.
Sauté and finish:
In the same pan, leave a little oil. Sauté the additional minced garlic, chopped onions, and sliced red chili peppers until fragrant.
Add the fried spareribs, stir-fry quickly to coat them evenly with the aromatic mixture.
Serve immediately.
Enjoy these crispy-on-the-outside, tender-on-the-inside spareribs with a rich garlic flavor – they’re truly irresistible!
