Corn Soup

Ingredients :

For Making Corn Puree :
½ cup - Sweet Corn Kernels
4 tbsp - Water

For Making Cornstarch Slurry :
2 tsp - Cornstarch
½ cup - Water


For Making Corn Soup :
1 tbsp - Oil (Butter)
½ tbsp - Minced Garlic
½ tbsp - Minced Ginger (Optional)
1 tsp - Chopped Green Chili
¼ cup - Finely Chopped Onion
¼ cup - Finely Chopped Carrots
¼ cup - Finely Chopped Green Beans
1½ cups - Sweet Corn Kernels
⅓ tsp - Salt (As Needed)
3 cup - Water (Vegetable Stock)
¼ tsp - Crushed Black pepper
2 tbsp - Chopped Green Scallion Onion
2 tbsp - Chopped Coriander Leaves

Directions :

For Making Corn Puree :
In a blender add, ½ cup sweet corn kernels
Add 4 tbsp water
Blend it to a smooth puree and keep it aside

For Making Cornstarch Slurry :
In a small bowl add, 2 tsp cornstarch
Add ½ cup water
Mix well keep it aside

For Making Corn Soup :
In a medium heated pot add 1 tbsp oil (butter)
Add ½ tbsp minced garlic
Add ½ tbsp minced ginger
Add 1 tsp chopped green chili
Saute for few seconds
Add ¼ cup finely chopped onion
Saute for 2 minutes
Add ¼ cup finely chopped carrots
Add ¼ cup finely chopped green beans
Stir fry for 2 to 3 minutes
Add 1½ cups sweet corn kernels
Add corn puree
Add ⅓ tsp salt
Mix well
Add 3 cup water (vegetable stock)
Mix well
Simmer on medium heat
Pour the cornflour slurry
Mix well and stirring constantly until it turns slightly thick
Add ¼ tsp crushed black pepper
Add 2 tbsp chopped green scallion onion
Add 2 tbsp chopped coriander leaves
Mix well
Remove the Corn soup in a bowl
Sweet Corn Soup is ready to serve
