Here are 4 easy recipes with kimchi and also they are vegan.
1. Kimchi Jjigae (Kimchi soup)
Kimchi jjigae is a staple dish in Korea which is made with kimchi, meat and few other vegetables. But this recipes is a vegan version of the same. It’s a comforting dish that can be enjoyed with rice.
Ingredients in the description:
Kimchi - 1/4 cup
Kimchi juice - 1/4 cup
Gochujang - 1 tbsp
Gochugaru - 1/2 tsp
Soy sauce - 1/2 tbsp
Sesame oil - 1 tbsp
Tofu - 1/2 a block
Garlic - 2 cloves
Onion - 1 medium
Cabbage - a small portion
Mushroom - 2
Green onion - few
Rice water - 1 1/2 cup
Veg stock - 1/2 cube

2.Bibimguksu
Bibimguksu is a famous Korean noodle recipe. This is often enjoyed in the summer as this is a cold noodle . It has a heavy taste of Kimchi which is one of their staple sidedish. This is a very unique noodle recipe that contains thin noodle, kimchi, soy sauce , garlic etc.
Ingredients:
Korean wheat noodles - 2 servings
Kimchi - 1/4 cup
Kimchi juice - 2-3 tbsp
Cucumber - 1/2
Garlic - 1 clove
Soy sauce - 1/2 tsp
Sesame oil - 1/2 tsp
Gochujang - 1 tbsp
Sugar - 1/4 tsp
Sesame seeds - 2 tbsp

3.Kimchi ramen
Kimchi Noodle soup is a flavorful and a bit spicy soup recipe. It is made with kimchi as the main ingredient and few other vegetables and condiments too. Kimchi - 1/2 cup

Gochugaru / chilli powder - 1/2 tsp
Gochujang - 1 1/2 tbsp
Soy sauce - 1 tbsp
Kimchi brine - 1/2 cup
Sugar - 1/2 tsp
Water - 3 cups
Veg stock cube - 1
Maggi - 2

4.Kimchi Bokkeumbap
Kimchi Bokkeumbap is the Korean name for Kimchi fried rice. It is usually made with kimchi, meat , rice and other ingredients. This recipes is a vegan version made with vegan kimchi.
Ingredients:
Kimchi - 1/4 cup + 2 tbsp
Tofu - 1/2 a block
Garlic - 1 tbsp
Day old rice - 1 cup
Spring onion - 2
Gochujang - 1 tbsp
Soy sauce - 1 tsp
Sesame oil - 3 tbsp
Gochugaru - 1/2 tsp
Sesame seeds - 1 tbsp
Kimchi brine - a little
