This week I make Hobak-jeon, a Korean dish with pan-fried zucchini.

I have lived in Korea for nearly half my life and here are some of my favorite recipes. This week it is an easy to follow recipe for a popular Korean side-dish that anyone can cook:

애호박전 hobakjeon

애호박 zucchini 1
소금 salt 50g
밀가루 flour 100g
계란 egg 2

Slice the zucchini into even .8-1cm slices.
Lay out on a tray and lightly salt each side.
Leave for 10 minutes then use a towel to remove the moisture.
Place the zucchini into a plastic bag with flour and shake to evenly coat.
Whisk up 2 eggs with a pinch of salt. Remove excess flour and dip the zucchini into the egg mix.
Pan-fry on medium with a bit of oil. Flip when it starts to turn golden brown.
Serve and enjoy.
