Soan Papdi is a popular Indian sweet, known for its flaky, melt-in-the-mouth texture. Here’s a traditional recipe to make Soan Papdi at home:

Ingredients
-2 cups Gram Flour (Besan)
2 cups All-Purpose Flour (Maida)
2 cups Sugar
1 cup Water
1 1/2 cups Ghee (Clarified Butter)
1/2 cup Milk
1/4 teaspoon Cardamom Powder
2 tablespoons Sliced Almonds
2 tablespoons Sliced Pistachios

Instructions

Step 1: Prepare the Flour Mixture
1. Roast the Flour- Heat a large, heavy-bottomed pan over medium heat. Add the ghee and let it melt completely.
2. Mix Flours- Add the gram flour and all-purpose flour to the ghee. Stir continuously, roasting the flours until they turn golden brown and aromatic. This should take about 15-20 minutes.
3. Cool the Mixture- Once roasted, remove from heat and set aside to cool slightly.

Step 2: Make the Sugar Syrup
4. Boil Sugar and Water- In a separate pot, combine the sugar and water. Bring to a boil, stirring occasionally until the sugar dissolves completely.
5. Add Milk- Add the milk to the boiling sugar syrup. This helps to clarify the syrup. Boil the mixture until it reaches a two-string consistency (hard-ball stage) which is around 240°F (115°C) on a candy thermometer.
6. Add Cardamom- Add the cardamom powder to the syrup and mix well.


Step 3: Combine and Form Soan Papdi
7. Mix Syrup and Flour-Carefully pour the hot sugar syrup into the roasted flour mixture. Stir quickly and continuously to combine everything thoroughly.
8. Aerate the Mixture-Once combined, begin to aerate the mixture by pulling and stretching it. This step is crucial for the flaky texture. You can do this by lifting and folding the mixture repeatedly until it cools down and becomes pliable.
9. Set the Mixture- Spread the mixture into a greased rectangular tray. Press it down evenly and smooth the top with a spatula or the back of a spoon.
10. **Garnish**: Sprinkle the sliced almonds and pistachios over the top, pressing them in lightly.

#### Step 4: Cut and Serve
11. **Cut into Pieces**: Allow the Soan Papdi to cool completely. Once cooled, cut into square or diamond-shaped pieces.
12. **Store**: Store in an airtight container to maintain freshness.
