1. Yes, the author was flattered in some way that he agreed to take the woman to an expensive restaurant. He knew that even thinking about going to Foyots restaurant was beyond his reach, it was a place where French senators went to eat . But, he was young and hearing that a woman, who admired his work, wanted him to take her out for lunch. He was flattered. So he agreed to the woman's idea of going to the expensive restaurant. Secondly, he was also too young to say ‘no' to a woman.

2. The author tried to dissuade the woman from ordering more delicacies by choosing the cheapest dish on the menu, a mutton chop. But the woman did not understand and instead scolded him and started lecturing him on the disadvantages of eating meat. When she ordered for white champagne, he ordered for water saying that the doctor had forbidden him to drink champagne. But still the woman would not understand. He did not order anything to eat when she asked for giant asparagus. The woman just did not understand or maybe she was pretending not to understand.
If I was in the author's place, I could either be honest and tell my guest politely that I was not very well off and could afford only a humble luncheon or I could simply lie to my guest and pretend an emergency meeting elsewhere that I suddenly remembered. But I would choose to be honest with her.

3. The author felt that he had taken his revenge when he saw the woman weighing twenty one stones. He did not actually do anything to the woman for making him suffer for one whole month. But when he saw the woman and how big she turned out after twenty years, he was filled with complacency and satisfaction. He felt as though the gods had avenged him upon the woman for all the trouble she caused for him.
Technically, it can not be called a revenge because the narrator did not do anything to cause the woman to gain weight. But the narrator is just being humorous. Besides, it is the result of the woman's own pretentiousness saying that one should eat ‘only one thing' but not practicing what she preached.
