Ingredients
Mustard oil/ sarson oil - 1 tablespoon or as required
Garlic - 12 to 13 cloves
Onion - 4 to 5 diced
Coriander seeds - 2 tablespoons
Cumin seeds - 1 teaspoon or as required
Fennel seeds - 2 teaspoon
Bay leaf - 1
Kashmiri red chili - 4
Tamarind/ imli - 1 small piece
Mustard seeds - 1/2 teaspoon
Urad dal/ split husked lentils - 1 teaspoon
Kalonji/ onion seeds - 1/2 teaspoon
Kahmiri red chili powder - as required
Salt - as required

Instructions
Heat oil in a pan. Add garlic, onion, and saute it on a medium flame. Occasionally stir it.
Add tamarind and saute it for 2 to 3 seconds and turn off the flame. Allow it to cool.
Meanwhile, heat a pan and add coriander seeds, cumin seeds, fennel seeds, and roast it well.
Add bay leaf and kashmiri red chili and roast it for a few seconds and turn off the flame. Allow it to cool.
Separate the bay leaf and add spices to the mixer jar. Coarsely grind and keep it aside.
Now, transfer the onion-garlic mixture into the mixer jar and grind it to a fine paste. Keep it aside for later use.
Further, heat oil in a pan and add cumin seeds, mustard seeds, urad dal, and kalonji. Saute it on a low to medium flame.
Add kashmiri red chili powder and onion-garlic paste. Saute it well.
Now, add 1 teaspoon of coarsely ground spice and salt. Saute it well.
Pour some water in the mixer jar in which we ground onion-garlic paste so that all the paste that stick to the surrounding mix with the water.
Now pour that water into the pan and mix it well. Allow it to cook for a few seconds and turn off the flame.

Tips and Suggestions by Chef:-
Use the fresh cloves of garlic and roast it properly.
Cooking the chutney with tempering increases the shelf life.
The recipe tastes good for a week when refrigerated in an airtight container.
The color of the chutney will vary with the type of red chilies used. I prefer to add Kashmiri red chilies as they are low on the heat quotient and give a good color.
Use mustard oil to enhance its taste.
